Our ingredient for this month can be cooked in both savoury and sweet dishes. Super rich in vitamin A and in fiber, this colorful and versatile food will never let you down. Try it in one (or several) of our three recipes and it could rapidly become a staple in your diet!

Easy Sweet Potato Pancakes


6 pancakes


  • ½ cup mashed sweet potato (about  one medium sized cooked sweet potato)
  • 2 eggs
  • ½ tsp cinnamon
  • Butter or canola oil (for cooking)


1) In a bowl, mix all ingredients.
2) Melt butter or oil in a pan.
3) Add the mixture in the pan using around 2 tbsp for each pancake.
4) Cook pancakes on medium-lower heat for 3 to 5 minutes on each side.
5) Serve while it is hot with some maple syrup if desired.


Chicken, Sweet Potatoes and Vegetable Sheet Pan Meal


4 servings


  • 1 large sweet potato, peeled and diced
  • ¼ cup olive oil
  • 4 garlic cloves, finely chopped
  • 2 tbsp aromatic herbs
  • Salt and pepper to taste
  • 2 boneless skinless chicken breasts (1 pound), diced
  • 1 head of broccoli cut into florets
  • 1 ½ cup mushrooms, sliced
  • 1 red onion, sliced


1) Preheat oven at 400°F.
2) Line a baking sheet with parchment paper of aluminium foil.
3) Add sweet potatoes, one teaspoon of olive oil, one garlic clove, ½ tablespoon aromatic herbs and some salt and pepper. Toss to coat everything.
4) Cook in oven for 20 minutes.
5) Remove baking sheet from the oven and add chicken, brocoli florets, mushrooms, onion. Add remaining olive oil, garlic and aromatic herbs. Season with salt and pepper and toss again to make sure everything is coated.
6) Cook in oven for 20 minutes or until chicken is cooked through.


Baked sweet potatoes


2-4 portions


  • 2 sweet potatoes
  • Coconut oil
  • Salt and pepper to taste


1) Preheat oven at 400°F.
2) Slice sweet potatoes in half.
3) Line a baking sheet with aluminium foil.
4) Lay sweet potatoes sliced side up on the baking sheet. Baste with coconut oil and add salt and pepper.
5) Flip sweet potatoes on the baking sheet and cook in oven for 30 minutes or until sweet potatoes’ flesh is lightly caramelized.
6) Serve hot with butter or your favourite toppings.
