3 simple leek-based recipes

Start the new year on the right foot with our veggie of the month: the leek! As part of the same family as onions and garlic, it shares their therapeutic properties, although in a slightly more subdued manner. Rich in fiber, vitamins, and minerals, leeks are filled with everything except calories: indeed, they contain a mere 60 calories per 100g! On top of that, they’re also an extremely flexible ingredient – they taste great steam cooked, and when sauteed, they’re a perfect match for any type of seafood. To help you get back on a healthy track, we’ve prepared three simple leek-based recipes you can savor all day long:

1. Leek soup

INGREDIENTS

  • 6 leeks
  • 2 onions
  • 1.5 L veggie broth
  • 20 g butter
  • 500 ml liquid cream

PREPARATION

  • Clean the leeks and cut them into small pieces
  • Chop the onions (Pro-tip: Wear swim goggles to wade off the tears! We’re only half joking…)
  • Place the butter into the pan over a light flame
  • Add the leeks and onions
  • Brown them by coating them with foaming butter
  • Sprinkle with salt and pepper
  • Add 1.5 L of broth, then cover and let cook for 30 mins
  • Add the cream at the very end and serve!

Tip: Replace the veggie broth with chicken broth to add a meaty flavor to your soup.

2. Leek pie

INGREDIENTS

  • 1 roll of dough
  • 4 leeks
  • 1 onion
  • 1 egg
  • 20 g butter
  • 500 ml liquid cream
  • Cheddar cheese

PREPARATION

  • Brown the pie dough
  • Clean the leeks and cut them into small pieces
  • Chop the onion into small pieces
  • Place the butter into the pan over a light flame
  • Add the leeks and onion to the pan
  • Let them melt gently (approx. 15 mins) by coating them with foaming butter
  • Sprinkle with salt and pepper
  • In a salad bowl, mix the keels with the cream, egg, and grated cheddar
  • Pour everything into the pie dough
  • Cook for 30 mins until the pie is nice and golden

Tip: Savor your leek pie with a green salad for an extra healthy boost!

For a more protein-rich version, you can add strips of shredded chicken to the mix.

3. Fish fillet on bed of leeks

INGREDIENTS

  • 6 slices (≈200 g each) of salmon, sole, or any other fish of your choice
  • 6 leeks
  • 30 g butter
  • 250 ml thick cream

PREPARATION

  • Clean the leeks and cut them into small pieces
  • Place the butter in a frying pan on low heat and add the leeks
  • Let them melt gently (approx. 20 mins) by coating them with foaming butter
  • Sprinkle with salt and pepper
  • Preheat the oven to 180°
  • Form a bed of leeks in a glass oven-ready container
  • Add the slices of fish on top and cover them in fresh cream, then sprinkle with salt and pepper
  • Cook for 15 mins

Tip: Sprinkle a little parsley on top for a charming visual effect.

Add some curry in with the leeks to add a spicy touch.

For a more generous meal, serve with rice or fresh tagliatelles.
